Jules Destrooper Amelia - black garlic - strawberry - celeriac

Celeriac

  • 0,25 Celeriac
Cut the celeriac into thin slices. Cook until al dente in salted water. Allow to cool. Season with some olive oil and pepper.
  • 4 Amelia
  • 2 Strawberry
  • 2 tbsp Black garlic puree
Mix the black garlic with a little water so you can spray pipe it easier
Cut the strawberries into smaller pieces.
Place a slice of celeriac on an Amelia. Pipe some black garlic puree on top. Arrange some strawberry along and garnish with a basil leaf.
